Maggiano’s Little Italy Spinach & Artichoke al Forno Recipe

This time of year calls for warm bites and comfort foods. Spinach & Artichoke al Forno is one of our classic appetizers and great for holiday gatherings. It can be prepared in advance and reheated, too. Traditionally it is served with crostini, ciabatta or crackers, but try a lighter take with sliced vegetables or pita chips. And here’s a little food trivia: al forno is an Italian term describing food that is “at or from the oven.”

Serves 15

2 Cups canned artichokes, drained and rinsed
2 Cups sautéed spinach, drained and chopped into ¼” pieces
3 Tbsp olive oil
¼ Cup sun-dried tomatoes, rough chop
2 Cups Asiago cheese, shredded
½ Cups scallions, sliced
1 Cup heavy cream
1 Tbsp Parmesan cheese, grated
Salt and pepper to taste

Preheat the oven to 350 degrees. Place artichokes, tomatoes, spinach and scallions in a large mixing bowl with Asiago cheese, cream and olive oil. Mix with a spatula until all ingredients are combined. Add salt and pepper to taste. Spread the filling evenly into a lightly greased oven-proof dish and sprinkle with Parmesan. Place dish in the center of the oven and bake for 20 minutes or until center reaches 165 degrees. Serve with your choice of bread, crackers, vegetables or chips.
