There is just something appealing about Italian cuisine this time of year. To celebrate Valentine’s Day, recreate these romantic recipes for your sweetheart - fresh from Chef KB’s vault. Take a look the first two courses today and join us for part two on Thursday.
Mussels Tuscan Style
15 pieces Prince Edward Island mussels
8 oz White wine
3 oz White cannellini beans
1 oz Sun-dried tomatoes
1 tsp Garlic, chopped
1 oz Extra virgin olive oil
1 Tbsp Basil
1 Tbsp Butter
1 Tbsp Parsley
Salt and pepper to taste
Croutons lightly toasted in garlic oil for garnish
In sauté pan, lightly toast garlic in extra virgin olive oil for 30 seconds. Add cleaned mussels and cook for another 30 seconds. Add white wine and steam until open in covered sauté pan on medium heat. Add beans, tomatoes, basil and parsley. Cook for 1 minute on low heat. Add butter, salt and pepper. Cook until butter is melted. Remove from heat and serve immediately. To plate, using tongs, place mussels in a shallow dish to that mussels face upward. Pour sauce over the top and garnish with garlic crouton. You may want a little toasted baguette to enjoy the rest of the sauce you created!
Filet Medallions Pizzaiola
4-6 pieces Beef tenderloin medallions or sirloin, grilled to your liking
1 oz Olive oil
¼ cup Roasted red peppers, diced
¼ cup Red onions
10 Kalamata olives, chopped
6 oz Mozzarella cheese, sliced or shredded
1 jar 25 oz Maggiano’s Tomato Basil Sauce (ask your server or find us in select Specs, Sprouts, Safeway or Albertson’s stores)
Grill the beef to one temperature below your preference as it will carry over and cook. In a saucepan, heat the olive oil under medium heat and add red peppers, red onions and kalamata olives and cook for 3 minutes. Add 1 jar of Maggiano’s Tomato Basil Sauce and simmer for approximately 5 minutes. Place the beef into a baking/serving dish and cover with the sauce, top with mozzarella cheese and bake at 350 degrees for 3-4 minutes.
Enjoy and come back on Thursday the 12th as we round out this Valentine’s Day feast with a pasta course, decadent dessert and cocktail for two!
