Happy National Pasta Day! Every dish has a story, and we want to share the story behind our Stuffed Pastas feature, Paccheri Amatriciana (prounounce pa-ker-ee ah-ma-tree-she-ana). Paccheri pasta,“the garlic smuggler,” was invented as a way to smuggle Italian garlic into what was once called Prussia and is now Austria. The Prussian government banned Italian garlic trade, so Italian garlic farmers hid cloves inside paccheri when crossing the border.

The Story Behind the Dish: Paccheri Amatriciana

Along with pretty much every other Italian-food-loving person alive, the Maggiano’s chefs love the combination of flavors Amatriciana sauce:  modestly smoked speck ham, high quality Italian sausage, sweet red onions, classic marinara sauce, a touch of spice for heat, and grated Grana Padano Parmesan cheese.  The chefs felt that this sauce shined served over these simple cheese & speck-filled “Paccheri” – large, hollow tube-shaped pasta, similar to an oversized rigatoni.
